A third generation blacksmith, Master Shiro Kamo of Kamotou Hamono, is one of the founding fathers of Takefu Knife village and awarded the “Dento-Kogei-shi” – Master of Traditional crafts by the Japanese state. Going through his 6th decade, the Master still works in Takefu passing his experience and craftsmanship to his younger disciples.
His knives are masterpieces in their simplicity.
Shiro Kamo Damascus SG2 series is maybe its top line. Forged with SG2 powder stainless steel in the core and featuring a beautiful Damascus mat distinctive finish. Cannot be considered a laser, but still is a lightweight and thin knife that will fly through produce like air. Comes with a beautiful Karelian birch handle and fairly sharp out of the box.
Meaning “Beef knife” in Japanese, the Gyuto is the most common and basic of all knives, the Japanese version of the classic western Chef’s knife. It is used as a multi-purpose knife, suitable for meat, fish, vegetables and more. Can be used with almost all different cutting techniques. The 240mm size is used both by professional and experienced home cooks.
