Dikristo

Rooted in the centuries-old traditions of Japanese bladesmithing, Kisuke Manaka carries forward a family lineage of craftsmanship with a modern, refined touch. Working from his forge in Japan, Manaka-san blends inherited techniques with his own evolving style, producing hand-forged knives known for their character, balance, and unmistakable cutting feel.

A Legacy in Steel

Raised in a family deeply connected to blade making, Kisuke Manaka learned the fundamentals of sharpening, steel selection, and handle crafting from a young age. His early exposure to traditional tools and natural stones built the foundation for the work he creates today—knives that respect the past while embracing the needs of modern cooks.

Hand-Forged With Intention

Every knife begins with raw steel and a clear vision. Manaka-san continues to forge his blades in-house, a practice increasingly rare among contemporary craftsmen. From shaping the blade to refining its geometry, he meticulously controls each step, resulting in pieces that carry both precision and personality. He is one of the last ones to make a knife from start to finish by himself.

Craft That Speaks Through Use

Kisuke Manaka’s knives are admired by professional chefs, dedicated home cooks, and collectors seeking blades that feel alive in the hand. Known for their responsive edges and satisfying feedback on the cutting board, his knives embody the harmony between sharpness, durability, and aesthetic simplicity.

Philosophy of Making

For Manaka-san, a knife is more than a tool—it is a companion shaped by the spirit of the maker and the needs of the user. He believes in making knives that reveal their strengths through daily use, growing more comfortable and expressive over time.

A Knife Maker for the Present and Future

Through dedication, experimentation, and respect for tradition, Kisuke Manaka continues to refine his craft. His work honors the past while shaping the next chapter of Japanese knife making.

The Koku ENN Series

The Collector’s series of Kisuke Manaka, and the most rare and sought after knives by Kisuke Manaka. They usually take 2 to 3 years for delivery and we are happy to finally have them available in our range.

Featuring one of the most amazing Damascus patterns, the Koku ENN series is hand-forged by Manaka-san himself, using Aogami #2 and soft carbon steel folded multiple times. The core of the blade is made by Aogami #1 steel, for exceptional performance, long edge retention and ease of sharpening.
